It should be different.
We have a choice of choosing 'Any', 'Paved', 'Gravel', 'Routes', and possibly 'Night', each option offering a different route from A to B (if available).
Yes – when you switch to ‘Routes’, it will snap your start and end points, and any other via points, to the nearest locations on cycle routes. If you then switch back to ‘Any’ then those start and end points will remain.
