I've planned a route from A to B and I'm trying to add a via point but when I hold my finger on the point it changes the route to end at that point instead of adding it as a point on the route. Am I missing something?

I've just checked on my Android phone and everything is working as normal.
However, your description is a little confusing to me.
On the assumption that you are trying to add a point between A & B are you pressing on the route (the actual blue line) or some other point off the route?
If the latter, that will explain your situation.
The best thing is to add a viapoint to the route and then drag that to where you want it to go.
Simply press on the route (blue line), select Add Viapoint, then manually drag that to where you want it to go.
Does that help?
Incidentally, there is an "undo" option if you hit the three horizontal bars on the top left of the window you will get a menu. Select undo from that and you can undo several points back.
