They're route names. On https://cycle.travel/map/journey/86899 - AV I knew is Avenue Verte, the Paris-London international route popularised around 2012. 5 appears to be a local Paris route (it's in a light blue) and REVe EO was new to me, but seems to be "Réseau Express Vélo Est-Ouest" or Cycle Express Network East-West, also a local route. There's more about that on https://www.paris.fr/velo
Oh and "REVe" also means "DREam" so it's a bit of a pun.
In theory, these should be signed or at least waymarked to appear on the maps, but in practice, signs go missing sometimes and maps are sometimes updated first to help tell the signers where to put signs.
