Luc, we can use the search function (top right of this screen - if on a phone you'll need to hold it horizontally). This way you can find routes (public) created by other users. However, we don't know when these were made nor the preferences of the creator in relation to gravel/roads etc. Typos, misspellings or just different names in different countries add to the fun! :-)
Alternatively you can use the 'Route Guides' a collection of 'official routes'. cycle.travel/browse

Just to add:
The search facility noted by Hobbes seems to search words in the title of routes users have saved with status = public, but it also searches all the words in various articles (route guides etc) that are elsewhere in the Cycle Travel website. So, for example, searching for "York" returns 120 pages of results (!) - some being in the title of routes to/from York, etc, but also articles that refer to New York.
The 400 most recently saved routes (with status = public) can be seen too. From the website home page, near the foot click on "Journeys"; 20 pages each with 20 routes are listed and they open when you click on theme, enabling them to be saved into your own CT account if desired. They are listed according to the date of their first save, with the most recent top of the list. (Currently, the oldest routes were created around 10.00 on the day before I type this, showing the volume of use of CT, with routes in many countries!)

You can now filter search results – so you can search for ‘York’ and then click ‘Journeys’. A more detailed journey search is in the works!
