I have had 2 goes at this now and neither were entirely satifactory. The obvious Lea Valley route south of Ware on NCR 1 is difficult as the cycleways are narrow and shared with a variety of pedestrians. If you have the patience or get lucky with a quiet day I'd advise avoiding the Lower Nazing/Clyton Hill section of NCR1.

It hasbeen suggested a better route is via Epping.

Yep, getting out of London to the North is a bit of a pain, seems you're either on main roads, zigzagging around housing estates or taking the infamous storm drain under the M25.  NCR1 avoids all those, but at the cost of weaving around pedestrians.  Lots of cyclists just seem to take the A1000 out as far as Potters Bar and then disperse into the Hertfordshire lanes from there.
